Charlie:Good morning. Thanks for giving me an opportunity for a job interview.

Manager:We've gone through your resume and found that you have worked in an English restaurant and performed well. But the point is we only operate an Italian cuisine.Though you have an outstanding education background in Italian cooking,I'm still wondering if you're skilled in the regional food of Italy.

Charlie:I think I am qualified for the Italian cooking,because I'm the only chef in charge of Italian food in that English restaurant. And due to my excellent work,they sent me to Italy for an exchange program.I have learned a lot of traditional Italian cuisine in this program.

Manager:Well,that's nice. Are you specialized in starters,as this would be the first impression for the customers?

Charlie:Yes. I'm good at different kind of starters,such as bocconcini salad,barley mushroom risotto,classic bruschetta,fennel and orange salad……

Manager:Wonderful. Tomorrow we would like to test your practical skills in the kitchen.Good luck with your final interview.

Chef:Today we're going to do some authentic Italian starters,marinated olives,Aubergine parmigiana,sausage stuffed mushroom,crostini,prosciutto con melone,carpaccio salmone.

Assistant:OK. I just cleaned up all the kitchenware.What should we do now?

Chef:We're ganna start with the carpaccio salmon. You prepare the ingredients,including 350g smoked salmon,half cup of olive oil,2 tablespoons lemon juice,1 small red onion,finely chopped,1 tablespoon parsley,finely chopped,2 teaspoons capers,ground black pepper and extra capers for garnish.

Assistant:I will go and get them. Then what should we do next?

Chef:I will combine oil,lemon juice and capers in a bowl. Mix them well.Then,arrange smoked salmon on individual plates and drizzle dressing over the salmon.And season with ground black pepper and sprinkle with parsley.

Assistant:That's it?

Chef:Well,remember to serve immediately,otherwise,the lemon juice will'cook'the salmon.

Assistant:OK. Let's rush into it.

Antipasto means"before the meal"and is the traditional first course of a formal Italian meal. Traditional antipasto includes cured meats,olives,peperoncini,mushrooms,anchovies,artichoke hearts,various cheeses(such as provolone or mozzarella),pickled meats and vegetables in oil or vinegar.

意式开胃菜就是餐前点,是意大利菜式传统的第一道菜。传统意式开胃菜包括腊肉、橄榄、意式辣香肠、蘑菇、鳀、洋蓟芯、各式奶酪(如菠萝伏洛干酪、意大利干酪)、腌肉、腌蔬菜等等。

The contents of an antipasto vary greatly according to regional cuisine. It is quite possible to find in the south of Italy different preparations of saltwater fish and traditional southern cured meats,whereas in northern Italy it will contain different kinds of cured meats and mushrooms and probably,especially near lakes,preparations of freshwater fish.The cheeses included also vary significantly between regions and backgrounds.
